ACS: Science ABCs - "J" is for Juice

Jasper drives a juicemobile
Throughout the neighborhood.
He sells all kinds of juices
That look and taste so good.

He’s made a juice from cabbage—
The flavor is brand new.
But customers won’t drink it.
They don’t like juice that’s blue.

There is an easy answer—
Something that you can add
To change the juice’s color,
And start a cabbage fad!

What You’ll Need

  • red cabbage leaf
  • warm water
    (about 1/2 cup)
  • plastic zip-closing bag
  • plastic cup
  • vinegar
  • teaspoon

Why does Jasper’s juice change colors?

The color of a substance depends partly on the chemicals in it. When vinegar is added to cabbage juice, a chemical reaction occurs, making a new chemical. This new chemical makes the juice a different color.
